Stuffed Peppers


Adding another branch to my blog, I am going to start giving a few recipe ideas. Now, I am by no means a master chef, but I think I am pretty good at making cheap, healthy and easy meals, which I will try and make look nice too! To begin, a really easy meal if you have some peppers to use up... 

Start by boiling some rice, and if you like some lentils, only a small hand full. In a frying pan, brown some finely chopped onions and garlic and add the cooked rice. Then add whatever you like really. I added some frozen peas, some frozen spinach leaves, some cashew nuts and some raisins. Cook it all together in the pan and season to taste. Cut the pepper in half and remove the insides. Then stuff the cooked mixture tightly into each half. Cover with olive oil and pile some grated cheese over the top. Bake in the oven for about half an hour or until the cheese is brown and the pepper is soft. Goes great with ketchup!
